Hello Kitty cake

I am such a Hello Kitty lover. Since I was a kid, I love Hello Kitty and I even have a collection of Hello Kitty plush toys and everything that has Hello Kitty in it such papers, envelopes, wallets, purses, name it! Haha...I thought they were cute! And my baby girl's room is a Hello Kitty theme too! I got excited when my husband's cousin asked me to make a cake for her daughter's first birthday and she wanted something girly with flowers and a Hello Kitty. So I tried to make a Hello Kitty cake topper out of gumpaste. I'm not an expert in making molds and sculptures from gumpaste and I wanted to practice that skills. I didn't went to cake decorating schools and everything that I learned are all self-taught. Internet is my best source!

My loving parents who brought me in this world and love me unconditionally and taught me valuable lessons in life.

My wonderful friends who’s always there through thick and thin. 

My loving husband that I love so much. He is my soulmate and my bestfriend, loves me for what I am, understands and supports me. I couldn't ask for more.

The growing baby girl in my tummy. She’s a blessing from God, I love her and I can’t wait to meet her.

My Mom and Dad in law who loves me as like I am their daughter.

All the people who loves me.

Having a home to live, food to eat and the water to drink.

The good health.

The talent that God gave me.

The life itself.

There’s a lot of things to thank for but the important thing is to be thankful for everything that we have. Everything in this world is a gift from God.

Peanut and banana cupcake

I'm not really a fan of banana. Since I was a kid, I don't like the taste of banana. Weird huh? I don't know, it's just the way it is. Haha...But I saw this recipe in Country Woman magazine and I thought...hmmm...maybe I better try this one. When I saw there is a banana, oh well, I guess I can try it. It might be good.

I tried the recipe and guess what?! I actually like it! Yummy in my tummy! Here is the recipe...


Ingredients:

1/2 cup butter, softened
1 cup sugar
2 eggs
1 1/4 cups mashed bananas (2-3 medium)
1/4 cup buttermilk
2 tsp. vanilla extract
2 cups flour
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
1 cup chopped lightly salted dry roasted peanuts

For frosting:

2 cups confectioner's sugar
1 cup creamy peanut butter
1/2 cup butter, softened
2 tsp. vanilla extract
3 to 4 tbsp. 2% milk
1 cup chopped lightly salted dry roasted peanuts



Preheat the oven at  350o F. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the bananas, buttermilk and vanilla. Combine the flour, baking powder, baking soda and salt and gradually add to creamed mixture, mixing well after each addition. Stir in peanuts.




Fill in paper liner cupcake cups two-thirds full. Bake at 350o F for 18-22 minutes or until toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.




For frosting:

In a large bowl, beat the confectioner's sugar, peanut butter and butter until fluffy. Beat in vanilla and enough milk to achieve desired consistency. Pipe frosting over cupcakes. Sprinkle with peanuts.



The finished product.
I just added some Thanksgiving decorations which are made of fondant.

This recipe will yield 1 1/2 dozen.

I tend to forget some things specially now that the pregnancy hormones are on the loose. Haha...

Thanksgiving cupcakes

Thanksgiving is around the corner and I made these cupcakes and decorated it with a Thanksgiving theme.







All decorations are made of fondant.

Airplane baby shower theme cake

I have a friend who had a baby shower last week and I made her cake. This friend of mine is only two weeks ahead of me. She's due by the first week of January. We are prego buddies. Her sister-in-law asked me to make a cake for her and she wanted to incorporate the design of the invitation. This is what I came up....
Oh by the way, she's having a baby boy!

I didn't went to her baby shower because I wasn't in town. I was in Oklahoma City with my hubby because he attended a training and at the same time it was also our mini vacation. But anyway, she told me that everyone liked the cake and they thought it was so cute. I am so glad that they liked it...   :)

Let's gobble gobble!

Thansksgiving Day is getting near. So I made a few batches of cookies this week. I got some more but I haven't decorated it yet because I have been busy making cakes! Plus my belly is getting bigger and I easily gets tired.I know! It's the discomfort of being pregnant. But despite of these discomfort, I am enjoying this pregnancy and love the feeling that there is a little girl growing inside my tummy.
