Pink onesie cookies

These cookies are for my friend's baby shower. I shipped the cookies in Tennessee, that's where she lives. I shipped it last Monday and she received it yesterday afternoon. She was so happy and she like it. By the way, she's having a baby girl and is due on February 15, 2013. I am so happy for her!

{Sweet Treat} Cranberry Orange Bread

If you like cranberry then this bread is for you. The citrus flavor of orange compliments the tartness of cranberry. This recipe is very easy. It's good for breakfast with your coffee! Yum! Since holiday is approaching, it makes a great gift too.



Recipe from {Joy of Baking}

Ingredients:

  • 1/2 cup pecans or walnuts
  • 1 cup fresh or frozen cranberries, coarsely chopped
  • 2 cups all-purpose flour
  • 1 cup white granulated sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon orange zest
  • 4 tablespoon unsalted butter, cut into pieces
  • 1 large egg, beaten
  • 3/4 cup freshly squeezed orange juice
  • 1 teaspoon pure vanilla extract

Directions:

  • Preheat oven to 350 degree F.
  • Toast the pecans or walnuts until lightly brown. Let it cool and then chop coarsely.
  • In a small bowl, combine beaten egg and vanilla extract.
  • In a large bowl, combine the flour, sugar, baking powder, baking soda, salt and orange zest.
  • Cut the butter into small pieces and combine it with the flour mixture.
  • Fold the wet ingredients into the dry ingredients and stir in the cranberries and nuts.
  • Pour into prepared pan and bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

{Mommy Moment} 10 months old


Happy Monday everyone!

Today, my baby turns 10 months old!



She has two teeth now and another one is coming out on top. She is now a handful! Haha...She likes to grab everything that she see including my hair and my nose. She's not walking yet but she took two steps one time and that's it. Too bad I didn't get to take video of that. She still sleeps good, 10-12 hours every night, takes two naps everyday for at least 2 hours. She eats good. She likes rice just like her mama.

In two months, we will be celebrating her first birthday and I'm looking forward for that. I'm excited! I already have designed her birthday invitation. I got everything planned. I know! It's still early! I just want everything done in time or probably I'm just excited. *big grin*

{Sweet Treat} Banana Bread with Cookies & Cream


I like banana bread but with Oreos cookies and cream?! YES please!




Recipe from {Picky Palate}


Ingredients:

  • 1 1/2 sticks butter
  • 1 cup granulated sugar
  • 2 eggs
  • 3 large bananas
  • 1 teaspoon pure vanilla extract
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 15 Oreo cookies, broken into pieces

Directions:

  • Preheat oven to 350 degree F.
  • In a stand or electric mixer, cream butter and sugar until well combined.
  • Beat in eggs, bananas and vanilla.
  • In a large bowl, combine flour, baking soda, ground cinnamon and salt and slowly add to wet ingredients.
  • Stir in Oreos.
  • Scoop dough into mini loaf pans or bread pan that have been sprayed with cooking spray.
  • Bake for 28-35 minutes if you are using mini loaf pan or 45-55 minutes if you are using the regular bread pan.

{Sweet Treat} Pumpkin Chocolate Chip Cookies

When I found this recipe, I was skeptical. Pumpkin and chocolate chips combo? Hmmm...sounds like an odd combination. I love chocolate chips but with a pumpkin, I wasn't sure. Haha..I gave it a try and it actually turned out great. I thought the combination was good, the pumpkin compliments the chocolate flavor. 

Here is the recipe that I got from {Taste of Home}.





Ingredients:

  • 1 cup butter, softened
  • 3/4 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 cup canned pumpkin
  • 1 1/2 cups semisweet chocolate chips

Procedures:

  • Preheat the oven at 35 degree F.
  • Cream butter and sugar until light and fluffy.
  • Beat in egg and vanilla.
  • Combine flour, baking soda and cinnamon and stir into creamed mixture alternately with pumpkin.
  • Fold in chocolate chips.
  • Drop by tablespoonfuls onto greased baking sheet or you can place a parchment paper on the baking sheet.
  • Bake at 350 degree F for 12-13 minutes or until lightly brown.

{Mommy Moment} Watch my baby grow

One of the best thing of being a Mom is seeing your baby grow. Isn't that amazing how they develop and grow so fast? This week my baby started to stand by herself. Standing already?!
 


This was unexpected! As I was taking picture of her, she suddenly tried to pull herself up and stand by herself. Oh my goodness! I was not ready for that! It was really fast but luckily I had the photo. The camera is always ready! Haha...


She also loves books. She loves to look at the pictures.



This is her reaction whenever she sees herself in the mirror. She will look at herself in the mirror and giggles. It was so cute. It amazes me how much she seems to learn each day. I love her more and more each day.

{Sweet Treat} Coconut Macaroons

Coconut macaroons are meringue type of cookies. It is slightly crunchy outside and soft and chewy on the inside. There are many recipes out there but this one is my favorite. I got the recipes from Joy of Baking.







Ingredients:

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1/2 cup flour (The recipe called for cake flour but I just used the all-purpose flour)
  • 4 cups of shredded or flaked dried sweetened coconut

Instructions:

  • Preheat oven to 350 degrees F.
  • In a heatproof bowl, placed over a simmering saucepan of simmering water, whisk egg whites, sugar and salt.
  • Remove from the heat when egg whites mixture are creamy.
  • Stir in vanilla extract, flour and coconut.
  • Cover and refrigerate for at least two hours or until firm.
  • Do not forget to put parchment paper or else the macaroons will stick on to the baking sheet.
  • When it's firm enough, place small mounds of the mixture onto the baking sheet, placing an inch apart.
  • Bake for 15-20 minutes or until golden brown.

{ This recipe makes about 2 dozens }


I made these for my daughter's baptism last week and it was a hit! Ha! My husband love this too! Well, he is my guinea pig whenever I have new recipes to try. Haha...

My latest wedding cake

This is a little bit late post. I made this wedding cake three weeks ago but I forgot to post photos! But anyway, this was very challenging because that was the first time that I made scroll work in a cake. When the bride told me that she wanted scroll designs, I was nervous because I don't know if I can pull it off. I accepted it and I thought, well, this is my chance to challenge myself. I don't have professional training and I am only making cakes for almost two years. I am self-taught. I want to learn more and I want to develop my skills.
